Coffee spread to Italy, then to the rest of Europe, to Indonesia, and to the Americas, from the Muslim world. Coffee berries and their seeds undergo several processes before they become the familiar roasted coffee. First, coffee berries are picked, generally by hand. After fermentation beans are washed in fresh water to remove residue and this creates large amounts of coffee waste water. The last step is to dry out the seeds. The most superior (but least utilized) method of drying coffee is using drying tables. In this method the pulped and fermented brownness is spreading thinly on upraised beds, which allows the air to progress on all sides of the java; then the brown is integrated by manus. In this method the drying that takes place is more uniform, and fermentation is less likely. This traditional method of drying coffee in Africa is beginning to catch on in farms globally.
